Vegetarian Mexican Party Food Recipe

Toasted Mexican cheese and bean slices


4 flour or corn tortillas
A can of refried beans
Some cayenne pepper
A can of kidney beans
A dozen cherry tomatoes
A good wedge of cheddar
1 green chilli
1 soft avocado


1. In a bowl, mix the refried beans, cayenne pepper, drained kidney beans, the soft avocado and the cherry tomatoes together. Spread the the mixture over two of the tortillas.
2. Sprinkle plenty of grated cheese over the mix and place the other tortilla on top so you’ve created two tortilla sandwiches.
3. In a hot frying pan, dry fry the tortillas until they go brown and crunchy. Carefully remove from the pan and place on a plate. Using a sharp knife, cut the tortillas into slices, making sure not too much of the melted cheese oozes out.
4. Serve with some salsa or guacamole.
