<p><strong>Ingredients:</strong></p>

5 large flour tortillas (10-inch)<br />
1 (15 ounce) can black beans<br />
1 1/2 cups frozen corn kernels<br />
1 1/2 teaspoons chili powder<br />
1 teaspoon ground cumin<br />
1 teaspoon garlic powder<br />
1 (14 1/2 ounce) can diced tomatoes with mild green chilies<br />
1 (15 ounce) can tomato sauce<br />
2 cups shredded Mexican blend cheese , divided use<br />
1 bunch green onion (for 1/2 cup chopped)<br />
1 (2 1/4 ounce) can sliced black olives (optional)<br />
1 teaspoon sugar<br />
1 large egg<br />
16 ounces regular sour cream</p>

<strong>Preparation:</strong></p>
<p>Preheat the oven to 400 F; Spray a 13-by-9-inch baking pan with cooking oil spray; Set aside. Stack the tortillas on a cutting board, and slice through them lengthwise into 3 strips each (The strips will not be uniform because of their circular shape; This is OK) Set aside. Pour the corn and black beans into a colander, and rinse with warm tap water to begin defrosting the corn and rinse the beans; Set aside to drain. In a small bowl, stir together the tomatoes with their juice, the tomato sauce, chili powder, cumin, garlic powder and sugar; Spoon about half of the sauce into the bottom of the dish; Cover the sauce with 5 of the tortilla strips (it&#8217;s fine if they overlap somewhat).Break the egg into a medium-size mixing bowl, and beat with a whisk or fork until foamy; Add the sour cream and 1 cup of the cheese; Stir to mix well; Spoon half of the sour cream mixture evenly over the tortilla layer and spread it out with the back of a spoon; Scatter half of the corn and black beans over the sour cream mixture. Place 5 more tortilla strips evenly over the corn and black bean layer; Top with the remaining sour cream mixture, and the remaining black beans and corn; Place the remaining tortilla strips over the dish; Pour the remaining tomato sauce mixture over the tortillas, and spread it evenly with the back of a spoon to moisten all of the tortilla strips. Cover the dish with foil, and bake for 30 minutes, or until hot and bubbly. While the dish bakes, rinse and trim the green onions; Slice the green onions thinly, using all of the whites and enough of the tender green tops to make 1/2 cup; Set aside. If using the black olives, drain them well, and set aside. After baking lasagna, scatter the green onions and olives, if using, evenly over the dish; Return the dish to the oven, uncovered, for 5 more minutes. Remove the dish from the oven, and scatter the remaining cup of Mexican cheese evenly over the dish. Return the dish, uncovered, to the oven, and bake until the cheese melts, about 3 minutes. Remove the lasagna from the oven, and let it stand 10 minutes; Slice into squares and serve.</p>

1 teaspoon chili powder<br />
1 teaspoon smoked paprika<br />
salt and pepper<br />
1 cup cheddar cheese<br />
1 garlic clove , minced<br />
1 teaspoon cumin</p>

<strong>Preparation:</strong></p>
<p>In a large skillet over medium heat, cook the ground beef until evenly brown. Drain and set aside. Heat the oil in the skillet over medium heat. Mix in the squash, onion and garlic and sauté until tender. Add the ground beef and tomatoes (and water if fresh tomatoes are used) into the skillet. Season with chili powder, cumin, paprika, salt, and pepper. Turn mixture into an ovenproof casserole dish. Top with cheddar cheese. Bake in 400°F oven for 15 minutes.</p>

1 lb ground beef<br />
1 (11 ounce) can mexicorn<br />
1 teaspoon chili powder<br />
1 (16 ounce) jar salsa<br />
1 cup cheddar cheese , shredded<br />
1/2 teaspoon salt</p>

<strong>Preparation:</strong></p>
<p>lace the 2 cups of water and long grain rice in a medium sauce pan and bring to a boil. Reduce heat to a simmer, place a lid on, set timer for 20 minutes and cook rice until done. Preheat oven to 350°F. In a skillet, brown ground beef and drain. Place in a large mixing bowl. In large mixing bowl, add the jar of salsa to the ground beef. Also add chili powder, Mexicorn, rice and salt. Mix with a wooden spoon until combined well. Spray a 2 quart casserole dish. Put rice mixture into dish. Cover with a lid or foil and bake in preheated oven for 30 minutes. At 30 minutes, take off lid/foil. Add shredded cheddar cheese evenly over top and bake for an additional 5 minutes. Remove from oven and serve.</p>

1 red bell pepper , chopped<br />

1 (10 count) package flour tortillas<br />
4 cups shredded cheddar cheese<br />
1 (16 ounce) can refried beans<br />
sliced black olives (optional)<br />
sliced jalapeno (optional)</p>

<p>Stir together sour cream and condensed soup. Pour half of this in the bottom of a large casserole or 9&#215;13-inch baking dish, spreading it evenly across the bottom. Brown and cook through the ground beef with the onion and bell pepper; drain any fat. Stir in taco seasoning, mushrooms and refried beans, mixing well. <p><strong>Ingredients:</strong></p>
<p>1 can refried beans<br />
1 cup Bisquick<br />
1 lb ground chuck<br />
1/4 cup water<br />
1 cup shredded cheddar cheese<br />
1 (16 ounce) jar taco sauce (not Salsa)</p>

<strong>Preparation:</strong></p>
<p>In small mixing bowl mix Bisquick, water, and Refried beans together. Spread in 8X8 baking dish. Fry ground chuck until brown drain off any grease. mix in taco sauce. Pour over&#8221;crust&#8221; mix. sprinkle with cheese. cover with foil. Bake@ 375* for 25-30 minutes.</p>

<p>Heat oven to 350°. Brown ground beef in a skillet and drain. Combine beef, pasta, salsa and beans in a large bowl. Spread half of mixture in a 9&#215;12-inch baking dish and sprinkle with half of the cheese. Repeat layers, cover and bake for 35 to 40 minutes.</p>

<p><strong>Ingredients:</strong></p>
<p>15 ounces tomato sauce<br />
1 1/2-2 lbs eggplants , unpeeled and cut into 1/2 inch slices (I use the American ones)<br />
1/2 cup green onion , sliced<br />
1/2 teaspoon ground cumin<br />
1/2 teaspoon garlic powder<br />
4 ounces diced mild green chilies<br />
6 ounces fat-free cheddar cheese , shredded (about 1 1/2 cups)<br />
cooking spray<br />
2 1/4 ounces sliced black olives , drained</p>

<strong>Preparation:</strong></p>
<p>Preheat oven to 450. Spray baking sheet with oil and place eggplant slices on it in a single layer. Spray the tops of the eggplant with oil. Bake until soft when pressed about 15-25 minutes. Meanwhile , in a small pot, combine tomato sauce, chiles, onions, cumin, garlic powder and olives. Bring to a simmer, then simmer, uncovered, over medium-low heat for 10 minutes. Turn oven down to 350 when eggplant is done. Arrange half the eggplant slices in a single layer over the bottom of a shallow 1 1/2 quart baking dish. Spoon half the sauce over eggplant and sprinkle with half the cheese. Repeat layers ending with cheese. Bake at 350 until heated through and bubbly (about 30 minutes). Top with sour cream if desired.</p>

<p>COOK BEEF. ADD TACO SEASONING AND PREPARE ACCORDING TO PKG DIRECTIONS. ADD CREAM CHEESE. COVER AND SIMMER UNTIL CREAM CHEESE IS MELTED. YOU CAN CHILL THE MEAT SO YOU CAN STUFF THE SHELLS EASIER. POUR SALSA IN THE BOTTOM OF A GREASED 9 X 13 IN PAN. WHILE THE HAMBURGER IS COOKING, COOK THE PASTA, DRAIN, TOSS WITH BUTTER. FILL EACH SHELL. PLACE IN BOTTOM OF PAN AND TOP WITH TACO SAUCE. COVER AND BAKE AT 350 FOR 30 MINUTES. UNCOVER,SPRINKLE WITH CHEESES AND CHIPS. BAKE 15 MINUTES LONGER OR UNTIL HEATED THROUGH. SERVE WITH SOUR CREAM, MORE SALSA, OR WHATEVER ELSE YOU THINK GOES GOOD WITH TACOS.</p>
