<p>Mix mayonnaise and lime juice in a small bowl until combined. Toss chicken, celery, onion, bell pepper, cilantro, and jalapeños in a large bowl. Add the mayonnaise mixture and toss until evenly coated. Season with salt and pepper to taste. Serve or cover and refrigerate for up to 2 days.</p>

<p>1 (15 ounce) can black beans<br />
1 (11 ounce) can whole kernel corn , drained<br />
1 (15 ounce) can tomato sauce<br />
1 tablespoon vegetable oil<br />
1 1/2 lbs boneless skinless chicken breasts , cut into 1/2 inch pieces<br />
2 cups shredded monterey jack and cheddar cheese blend , divided<br />
1 (8 ounce) package corn muffin mix (I made my own)<br />
2 teaspoons chili powder<br />
1 teaspoon ground cumin<br />
1/2 teaspoon garlic powder<br />
1/4-1/2 teaspoon dried chipotle powder (I use McCormick&#8217;s Gourmet Collections seasoning)</p>

<strong>Preparation:</strong></p>
<p>Preheat oven to 375 degrees. Heat oil in large skillet over med-hi heat add chicken and saute 5-7 minutes or until done. Add beans, corn, tomato sauce and seasonings to skillet. Bring to a boil over med heat. Remove from heat and stir in 1 cup shredded cheese. Pour into a 2 1/2qt casserole. Top with remaining cheese. Prepare corn muffin mix batter as directed on package. Spoon dollops of the batter over chicken mixture. Bake 25-30minutes or until corn bread is golden brown. You may serve with warm flour tortillas w/butter and a salad if desired</p>

<p>2 cups cheddar cheese , grated<br />
garlic powder<br />
5 lbs roast<br />
onion soup mix (optional)<br />
48 corn tortillas<br />
cheese sauce (optional)<br />
salsa (optional)<br />
sour cream (optional)<br />
onion powder (optional)<br />
1 1/2 cups picante sauce or 1 1/2 cups salsa or 1 (14 ounce) can diced tomatoes , undrained<br />
1/4 cup onion , finely chopped<br />
guacamole (optional)</p>

<strong>Preparation:</strong></p>
<p>Cook roast in roasting pan (or slow cooker), pouring onion soup mix, dissolved in 1 cup water, over it. Cook at 325F for 34-38 minutes per pound. Let cool thoroughly overnight in fridge. Finely chop (or shred) roast beef and mix with cheddar cheese, garlic and onion powder, salt and pepper, picante sauce and onion in a large bowl. Portion 1/4 cup mixture onto each corn tortilla in the lower 1/3 of the tortilla. Roll up tortilla. To soften tortillas, microwave between two damp paper towels for a few seconds. To freeze for later, simply put seam side down on cookie sheets and freeze. Flash freeze on wax papered covered cookie sheets. When firm, transfer to ziplock freezer bags. To Re-heat: Thaw, then lightly fry in hot oil until brown and crispy. To eat them now, continue with directions for frying below. Heat electric skillet to 300°F covering bottom with oil. Fry taquitos with open edge down to seal. Turn over fry other side. Serve hot with condiments.</p>

Toss salad and dressing and add crushed chips last.</p>

1 (11 ounce) can mexicorn , drained<br />
1 (10 ounce) can diced tomatoes with green chilies<br />
1 (2 1/4 ounce) can black olives , sliced, drained<br />
1 cup Mexican blend cheese , shredded</p>

<p>In a large saucepan, bring rice and water to a boil. Reduce heat; cover and simmer for 35-40 minutes, until tender. In a bowl, combine beans, corn, tomatoes, salsa, sour cream, cheddar, pepper and rice. Transfer to a 2 1/2 quart baking dish coated with nonstick spray. Sprinkle onions and olives over top. <p><strong>Ingredients:</strong></p>
<p>6 strips bacon , chopped<br />
2 cloves garlic , chopped<br />
1 lb dried pinto bean<br />

4 medium fresh plum tomatoes , chopped<br />
1/2 bunch fresh cilantro , chopped<br />
2 jalapeno peppers , seeded and chopped<br />
salt and pepper<br />
1 medium green pepper , chopped<br />
1 (12 ounce) can beer (chef’s choice)</p>

<strong>Preparation:</strong></p>
<p>Rinse and pick over beans. Bring the beans to a boil in a large pot of water and cook over medium heat for 1½ to 2 hours until they tender but still firm. Before the beans are done, fry the bacon in a large skillet until halfway cooked. Add garlic, tomatoes, onions, and green pepper; continue cooking with bacon until the bacon crisp. Add a can of beer to bacon mixture and simmer a few additional minutes, or longer if you like your beans softer. Add chopped cilantro and jalapenos; combine everything in one large pot. Add salt and pepper to taste.</p>

<p><strong>Ingredients:</strong></p>
<p>1 tablespoon oil<br />
3 medium yellow squash , sliced<br />
1 small onion , sliced<br />
1 lb ground beef or 1 lb Italian sausage<br />
1 (14 1/2 ounce) can diced tomatoes , undrained (OR 1 pint fresh tomato, diced and 1/2 cup water)<br />
1 teaspoon chili powder<br />
1 teaspoon smoked paprika<br />
salt and pepper<br />
1 cup cheddar cheese<br />
1 garlic clove , minced<br />
1 teaspoon cumin</p>

<strong>Preparation:</strong></p>
<p>In a large skillet over medium heat, cook the ground beef until evenly brown. Drain and set aside. Heat the oil in the skillet over medium heat. Mix in the squash, onion and garlic and sauté until tender. Add the ground beef and tomatoes (and water if fresh tomatoes are used) into the skillet. Season with chili powder, cumin, paprika, salt, and pepper. Turn mixture into an ovenproof casserole dish. Top with cheddar cheese. Bake in 400°F oven for 15 minutes.</p>

<p>1 (1 ounce) package hidden valley ranch dressing mix<br />
freshly cut chives , sliced thin<br />
2 (8 ounce) packages cream cheese , softened<br />
5 (12 inch) flour tortillas<br />

<p>Mix cream cheese, ranch dressing mix and green onions or chives well. Spread evenly over the tortillas. Sprinkle equal amounts of remaining ingredients on top of the cream cheese mixture. Roll up tortillas tightly. Wrap with plastic wrap and chill a minimum of 2 hours before serving. Remove plastic wrap and cut rolls into equal pieces &#8211; discarding the ends.
